Honey and Lime Chicken, Marmite Cauliflower Rice, Mango Salad and Flatbreads

Chicken and Mango - a match made in heaven and if you haven't tried it believe me when I say it is delicious.

You might realise quite quickly too that I am a huge fan of a sauce and well the honey and lime sauce used in this recipe is unreal too and should be used on everything!

And lastly I find that cauliflower rice on its own tastes like a fart so by adding some more bits to it it makes it edible and actually tasty too!





Chicken⠀

1, Chop and then fry chicken thigh in small batches, I coated mine in a thin layer of flour (optional)⠀

2, Once all chicken is golden add it all to the same pan until cooked through⠀

3, Mix in a separate bowl, 2tbsp honey, the juice of 2 limes, a glug of soy sauce and a tsp oyster sauce, until combined ⠀

4, Add sauce to your chicken and cook for a further 5 minutes until the sauce is sticky and all chicken is glazed, coated and cooked throughly

Cauliflower Rice (none fart flavoured)⠀

1, In the same pan as I cooked the chicken I fried off a finely chopped celery stick for a few mintues before adding in a packet of cauliflower rice (99p) along with a tbsp marmite, juice of one lime, salt and pepper ⠀

2, I added a little water and put on the lid for about 5 minutes until the liquid and flavour had been soaked into the rice ⠀

3, Finish off with some spring onion
