Potato Hot Pot

When I challenged to cook something from my hometown, I was firslt a little lost, as South Shields isn't known for its culinary delights. I don't think of our local food, and so I thought back to my childhood.

HOT POT! I am sure that most cultures have something similar but this here is something that really does make me think of home and although it would be made with corned beef instead of beef. This is a super simple recipe and unbelievably tasty too!!
